BioControl project featured in Coop Magazine
The research of Anna Greppi, a postdoctoral fellow in the Food Biotechnology group of Prof. Christophe Lacroix, is featured in an article in the Coop Magazine this month (Nr.1 /2017). The BioControl project aims to control the spoilage of fresh vegetables using naturally produced reuterin, a potent antimicrobial compound from the food-grade bacterium Lactobacillus reuteri.
The article includes an interview with Anna, highlighting her research on proving the concept of using reuterin as an effective alternative to chemical spoilage inhibitors. The group has succeeded in developing an efficient method to produce the reuterin, which can then be directly added to water used to wash fresh vegetables. Testing the shelf life of lettuce washed with the molecule is ongoing.
