Prof. Elliott further discussed the issue of food fraud in an interview with WFSC Executive Director Dr. Martin Sonnevelt. Prof. Elliott states that fraud is about people that are cheating us, cheating the global food system. Cheating can mean that we pay more for lower quality food items or that we even buy food that is unsafe. Prof. Elliott states that as we lose sight of where our food comes from, there are more opportunities for cheating than ever before.
